Zucchini cookies?! Who ever heard of such a thing?! Actually they are pretty good, and an awesome way to get a veggie that my kids usually hate eating (sauteed and delicious to me anyway) into their mouths (they LOVE these cookies!). Mindy requested the recipe, so here it is...
bake 375degrees for 10 minutes (or longer)
2C grated zucchini
2C sugar
4C flour (I used 1 cup whole wheat, 3C white)
1t baking soda
1t salt
1C oil
2 eggs
2t cinnamon
combine zucchini, sugar, soda, oil. Beat in eggs. Add flour, cinnamon and salt.
Can also add chocolate chips and nuts (I did) or raisins (I did not).
Drop them onto cookie sheet and bake.
They come out rather puffy. Sort of cake-like. They are good. But I prefer chunky, hearty cookies, not poofy, airy ones. So I wasn't crazy about the texture, but they do indeed taste good.

Thanks for the recipe! If the GRASSHOPPERS don't eat all my zucchini plants, I'll have to make some! =)
